BEHIND THE BUSINESS

Episode 001 — Leduc Edition

Every business has a story. This week, we're stepping behind the counter at Pastry Heaven.

Meet Pastry Heaven & Coffee Shop

Behind the counter at Pastry Heaven, with the full menu on display

The story of Pastry Heaven began seven years ago — not in a storefront, but in a home. Back then, there was no Pastry Heaven. There was simply Khatuna, baking for her family because she loved bringing people together through food. Before long, those homemade treats found their way to friends, and soon she began sharing traditional Georgian homemade sweets as well.

Over the past seven years, the encouragement never stopped. Friends, family, and customers continually praised her baking and encouraged her to turn her passion into something bigger. Every kind word, every compliment, and every request for "just one more cake" helped build the confidence to take the next step.

Meanwhile, Abir was working at the Marriott. Years in the hotel industry taught him something that shows the moment you walk through the door — greeting people like they matter, putting them first, genuinely loving the work of taking care of someone. That's not something you turn off when you leave a hotel lobby. Abir brought it straight into Pastry Heaven, and it's become just as much a part of the shop as anything on the menu.

Those years of home baking, hospitality, and encouragement eventually became Pastry Heaven — a place built on homemade recipes, genuine hospitality, and a passion for sharing great food with the community. What started in a home kitchen has now become a place where everyone is welcomed as part of the Pastry Heaven family.

A Day at Pastry Heaven

Their day starts early — really early. By 6:00 a.m., Abir and Khatuna are already in the kitchen getting everything ready from scratch. The first thing to come out of the ovens is the fresh baking: muffins made from their own in-house recipes, including customer favourites like Peanut Butter Nutella, Blueberry, and the famous Dutch Chocolate Cake Muffin. Alongside those, they're preparing cake sponges, cones for their cream rolls, and a long list of other baked treats.

While the baking is underway, they're also making the day's fresh soup and preparing sandwiches — because at Pastry Heaven, food is made fresh every day, never something that's been sitting around. By the time everything is ready, the first guests are walking through the door, and the café comes alive with the aroma of fresh coffee, warm pastries, and conversation shared over great food.

Every day is busy — but it's exactly how they imagined Pastry Heaven: a place where everything begins with fresh ingredients, hard work, and a passion for making people happy through food.

Cole, settling in with pistachio cake and tea in the Pastry Heaven lounge

Pastry Heaven opened its doors in January 2026, bringing Georgian homemade sweets and genuine hospitality to Leduc's local business community — one more example of how far a home kitchen and a lot of heart can go.

Their focaccia is their own in-house recipe, baked fresh daily — other breads are sourced through a local Italian bakery. On the drinks side, alongside the espresso classics, Pastry Heaven makes their own signature Heaven Brew, a Chai Latte, and a Pastry Heaven Affogato.

What to Order

Ask Abir to pick a favourite and he'll tell you it's a difficult question — every item on the menu has gone through countless rounds of testing and refinement. "Our goal isn't just to make something good — it's to make it the best it can possibly be," he says. "We believe there's always room to improve, so we're constantly tasting, adjusting, and perfecting our recipes."

If he had to recommend one savoury item, it's the Prosciutto Focaccia Sandwich — the focaccia is baked in-house every day, and that fresh bread makes all the difference. For dessert, it's the Cream Rolls, and they carry extra meaning: they're where Khatuna's journey began seven years ago, baking from home for family and friends. Those cream rolls were one of the treats that inspired Pastry Heaven in the first place — so every one they make still carries a piece of that story.

One more worth seeking out: the Pistachio Cake, a dessert Abir and Khatuna are especially proud of. Their passion for Mediterranean cuisine doesn't stop with savoury dishes — it shapes their desserts too. The rich pistachio cream gives the cake a distinctly Italian character, with deep nutty flavour and a smooth, luxurious texture — elegant without being overly sweet, with every layer carefully balanced to let the pistachio shine. It's a dessert that reflects their philosophy at Pastry Heaven: taking classic inspirations, perfecting every detail, and creating something guests remember long after the last bite.
